Green hop Green bottle
This is a beer that i've been dreaming of making for years; a true fusion of classic English green hop beers and Belgian saison. I could and did plan every aspect of the brew; water, grains, yeast, mash rests, fermentation etc however the only detail I couldn't control was what variety of hops I was going to receive. Working with Hukins Hops has been great, they were informative and kept in contact daily, updating me on what hops they were harvesting that day and what they planned to do the next.
Plans changed all the time, picking season seems chaotic but thats the beauty of it. I decided to pick a day to brew and leave the hops up to chance.
Luckily for me Endeavour was picked and they were sticky, bright and had a lovely soft melon and ripe peach aroma with sweet berry notes. This carries through in the final beer, carefully balanced with a relative sweetness from the chevallier malt and a great ester profile from the yeast.
I really hope you enjoy the very small batch of a dream beer of mine. It's intended to be drunk fresh, with a slightly lower than normal carbonation level to closely mimic cask beer, however if you age it I expect the Brettanomyces will continue to chew on long chain sugars and bio transform the hop compounds into something completely different. I look forward to cool cellaring a few cases to see where the coming years take this.
