Scatterlings is a brewery focused on making easy drinking saisons.  

Located in Virginia Water, Surrey on a working farm, we're taking our time to make balanced, purposeful beers.

Using mostly British ingredients and some old world techniques, we hope to offer something approachable but different.

All beers start their life in an open fermenter with a mixed culture of wild and domesticated yeast as well as lactic acid creating bacteria.  The hoppy wort undergoes many different fermentations and starts to mature after at least 12 months in French Oak barrels where the bitterness starts to ease and a little bit of acid begins to creep in giving our beers their signature tartness.

After barrels have been tasted and a blend is formed, beer is transferred from barrels to a blending tank where they usually receive a very small dry hop to elevate their aroma.  The tank gets a dose of cane sugar and fresh mixed culture to start the final fermentation in green 750ml bottles and kegs and once packaged, they rest for 3 to 6 months until they are ready to share with you.  It's definitely a labour of love with a style we are very passionate about.
